I am sure listening to the audiobook is responsible for at least some of why I enjoyed it so much because the conceit is that the story is told through a series of interviews and because the voice actors are so good; it made this all the more immersive and realistic.
A little suspension of disbelief helps, especially with the timeline (or resources). It seems more realistic that a group facing starvation may turn to murder by day 2, but accepting that the author chose to depict them as not being motivated by hunger, we still have an interesting (and gory) account of what fear, distress, and some mob mentality will drive us to do.
The whole time I was listening, my mind kept turning to another couple of horror/Disney-style theme park mashups:
1. Funland Creepypasta - from 2016 https://www.creepypasta.com/funland/
2. The Happiest Apocalypse on Earth tabletop roleplaying game - 2018 https://preview.drivethrurpg.com/en/product/237255/The-Happiest-Apocalypse-on-Earth
